Default Noob seeking advice on parts for ARF build

I have been flying my super cub off of the lake in my backyard for a few months now and since I wanted to try a plane with ailerons and think flying boats are pretty cool I bought a Guanli Catalina. I had read a lot of reviews saying that the electrical system and small parts in general on the plane were junk but that the plane flew well so I bought an ARF and want to add my own parts. I have pretty much settled on buying a Hitech Optic 6 transmitter so I can run both planes on it if not add more, however, I really don't know much about parts as far as quality and how to match them.

I would like to fly the plane faster than my super cub but don't want a ridiculous amount of power. Since i know literally nothing about electronics and the numbers on most parts(amps, volts, "draw"), I was hoping you guys might suggest a simple motor, esc, battery, servo setup that would be quality but not break the bank. Also if there is anything else I'm overlooking let me know.

Not real sure on your cat, but what I'd recommend is using the search function here, on RCU, and RCG, to see what folks used when they pulled the stock components out.
