DX7 Setup - for ground based RC

First off, let me appologise...
This question relates to a non-flying model.
Because the weather has been rather poor this year over in the UK, I have purchased an electric RC buggy. (Brushless motor and uses my 11.1v lipo's)
Now I can get out, as long as its not raining.
The model arrived on Friday, but would not initialise.
This turned out to be the receiver being faulty.
(have contacted the supplier, but being the weekend, no response yet)
Anyway - life story over.
What I have done is to install a spare AR6100 in the buggy, so I could test using the DX7.
Its working fine - the steering is on the Aileron channel 2, the throttle is on channel 1, as normal. (using Mode 2)
I have found that it initialises when the throttle is in the mid point, this allows for forward and reverse.
Now to the question - finally.
I am finding that the throttle is a little like an on/off switch.
And was wondering if anyone had a setup I could use to calm the power input.
Also because there is a 'brake' on the motor, at the mid point, it takes fractions of a second to realise, and so wont go to reverse if the change is sharp.
May be worth mapping the throttle to the Elevator stick, as this is spring loaded?
I have tried plugging the throttle to the Elevator channel, but it takes mid throttle position as that - not the brake point like the left stick does...
I would really really appreciate some help with this.
Hope that all makes sense - and that someone can please help me.

Have got the throttle on the sprung right stick (elevator), so letting go, it brakes.
Same are the pistol grip controllers, wait a split second and you can engage reverse by pulling down.
I have the steering on the left stick (rudder).
Not had chance to play out, as the weather has been raining all day.
But am confident it will be good and interference free.

Hey Drew,
Glad to know you got this worked out. It is good practice on configuring more complex models right?
So did you use 100% mixes to move the channels or did you do it by physically moving them in the Rx?

It is certainly faster than my Cub.
I did it the easy way - plugged the throttle (esc) to the Elevator channel.
Its setup using Heli mode, have created various throttle curves - only letting it get to 70%.
The spring loaded elevator stick is better than using the normal throttle channel.
When braking, with the throttle on the left stick, you can miss the center point, and have to adjust to find it - then put in reverse.....
So when using the right stick, it works pretty much as it should.
Included a picture....
