They also are designed to not really have a side that is "up" so that they handle the same in all orientations right?. You can also control them even well beyond "stall"(it is a lie!)

Yah. If you look at a modern airplane you will see that the root of the wing usually has a higher pitch than the tip(slightly twisted wing!) so that the tip is always at a smaller angle of attack...
