I think you are discovering why it is not so simple to set up a wing to fly well!
Just don't move the CofG back much at any one time. Too much and it will be absolutely uncontrollable.

Have you flown it yet?
Be aware that such a flying wing is much more sensitive to the CofG position than a conventional plane that has it 'stabilising'...
